‘One of the best butchers in the UK,’ is what Cartmel’s Michelin star chef Simon Rogan said of Higginsons not so long ago in the Daily Telegraph

The Meat Trades Journal obviously shared the same view as the owner of L’Enclume because it once voted Higginsons the Best Butchers in Britain, the firm’s ‘greatest achievement’. 

Founded in 1983 by Stuart and Pauline Higginson, the family butcher and pie maker has never wavered from its original ethos, ‘to bring the highest quality food and meat to our customers with care and commitment’. 

The business has won numerous awards for its pies and sausages, is a member of the Q Guild of Butchers and has its suppliers - and weekly specials - chalked up on a board inside the shop.

To the left as you enter is the deli counter with its cold meats, cheeses and pies. Steak, ale and Stilton; Huntsman’s; chicken, ham and leek; chunky steak and the ‘infamous’ pork pie are just a few of the mouth-watering pies they sell.

To the right is the fresh meat counter with its huge range of locally sourced lamb, beef, rare-breed pork, poultry and game, plus Higginsons’ award winning sausages and home-cured bacon.

The attractively arranged meat products such as lamb Henrys, peppercorn muffins, chicken cushions, beef truffles, black pudding and homemade beef burgers make for an eye-catching window display.

Seasonal specialities include Lakeland Herdwick lamb, Morecambe Bay saltmarsh lamb and game from the Cartmel Valley. Copas bronze turkeys, free range geese, the French-inspired ‘pintade farcie’ and many other treats are sold at Christmas.
