Puddings. Cartmel Sticky Toffee Pudding

2020 saw the 30th anniversary of this great Cumbrian food name, Cartmel Sticky Toffee Pudding sent and sold to people right across the UK and the rest of the world. 

Sticky ginger, sticky chocolate and sticky banana puddings, Christmas pudding, sticky figgy pudding, sticky toffee apple crumble, lemon drizzle sponge, sticky toffee sauce and sticky chocolate sauce are part of the family as well. 

After developing their own recipe for sticky toffee pudding in 1984, Howard and Jean Johns served it in the restaurant they then ran in Grange-over-Sands. When they took over the village shop in Cartmel they carried on making it, along with several other dishes. But sticky toffee outsold them all, so they moved production to bigger premises at home and then to the nearby village of Flookburgh. 

About one million puddings a year are now produced there - ‘from 100% natural ingredients’ - and then either sold online or in hundreds of delis and food shops nationwide, including Selfridges, Waitrose, Harvey Nichols and Fortnum and Mason. 

The pudding is also given as a prize to the owner, trainer and jockey of every winning race at Cartmel racecourse, a lovely quaint tradition in a multi-million pound industry.
